Title: Chocolate & Cocoa 101

Laura Kalaras is a Research and Development Project Manager for the Cocoa R&D team at Barry Callebaut.  She has been with BC since 2011 and has been part of both the chocolate and cocoa R&D departments, and is experienced in making and tasting cocoa and chocolate products from bean to bar. Prior to BC, Laura researched probiotic yogurt bacteria at Penn State University, where she received her B.S. in Food Science.

The Chocolate and Cocoa 101 presentation will focus on how bean origin, processing, and application affect the flavor profiles of food made with cocoa and chocolate.  Samples will be used to demonstrate the effects of these variables.
